Le Deno Fondo

THE LITTLE STORY | Deno Fondo was born out of an obvious idea. When you grow Chardonnay and Pinot Noir, it’s almost impossible to resist the urge to make a sparkling wine. We tried to resist for a while… but in the end, it was stronger than us.

TASTING NOTES | A lively and refreshing sparkling wine, true to the spirit of col fondo. The nose opens with aromas of ripe apple and juicy pear. On the palate, the bubbles are fine and the freshness is vibrant, carried by a subtle saline touch that lingers on the finish.

TERROIR | St-Pierre-de-l’Île-d’Orléans, sandy loam

VINIFICATION | Col fondo method, meaning “with the lees,” second fermentation on the lees
